Rollup recipe: Sally's Rollups.

This recipe is an adaptation of Rollups that Sally brought to a potluck. I have used it many times.

Ingredients:

   2 large-diameter (burrito-size) flour tortillas.
   
   Cream cheese - a half pound.

   Veggies (a handful of many of the following):
   Black olives (pitted).
   Mushrooms.
   Onions (red or green).
   Ortega green chiles.
   Roasted red peppers.

   (Optional) mustard, salt, or black pepper.

Method:

  1. Chop up what you prefer of the veggies.
  2. Blend the chopped veggies with the cream cheese.
  3. Taste; optionally blend in mustard, salt, or black pepper.
  4. Spread the blend on the tortillas; make it thicker to one side.
  5. Roll up tightly, starting at the thicker side so the interior will be filled (instead of being hollow).
  6. Refrigerate half a day, to let the rollup meditate so that the flavors mingle in a calm and enlightened manner.
  7. Slice and serve, perhaps with organic celery sticks or bite-sized tomatoes.
