STEVE'S FAVORITE BRUSSELS SPROUTS

12-16 OZ. BRUSSELS SPROUTS

4 TBS OLIVE OIL

5 CLOVES FRESH GARLIC

RED WINE OR BALSAMIC VINEGAR

 

Select the smaller, tightly wrapped Brussels sprouts from your local grocer. Trim and wash Brussels sprouts and cut an X in the butt end for quicker cooking. Place in a covered pot with 1/2 cup water to steam. Steam until a fork will enter the sprout without too much pressure, somewhat al dente as you will be sauteing them later (usually 4-6 minutes). DO NOT OVERCOOK! Remove sprouts from the pot and drain well. Peel and coarsly chop garlic while heating olive oil in saute pan. Place garlic in hot oil and saute for 1 minute. Add Brussels sprouts and stir to distribute oil over all. Continue to saute, stirring constantly for approximately 2-3 minutes being careful not to burn sprouts. Add a splash of red wine or balsamic vinegar just prior to removing from heat. Serve and enjoy
